Sandy Collins
3/4 to 1 oz. lemon juice
1/4 to 3/4 oz. simple syrup
2 oz. Scotch
Soda
Lemon

Stir first three ingredients over ice in a collins glass. Fill with soda and garnish with cherry and lemon slice.

When Chris asked what Scotch I wanted, I said “One step up from Johnny Walker.” He then asked if I wanted smoke or peat (flavors in Scotch). I went with smoke. He settled on The Balvenie 12 year Scotch. It definitely brought the smoke, although not as much as the Laphoiag 10 year, which he let me try. As with the Mike Collins from last week, this drink was delightful. Fizzy, tart, smokey… definitely a grown-up’s lemonade.
