3/4 oz. lemon juice
1 egg white
1 barspoon sugar
1 1/2 oz. gin
Shake very well over ice in a shaker. Strain into a chilled cocktail glass.
Bombay gin. This is also known as a Pink Lady, but has slightly more lemon juice. Very pleasant! Well balanced between sweet and tart with a lovely floral note and just a touch of bitterness (typical gin contribution). I’m still loving these “meringue” drinks, and this one was particularly pretty.
