1/4 to 3/4 oz. lemon juice
1 egg yolk
1 barspoon powdered sugar
1/4 oz. triple sec
1 1/2 oz. gin
Shake very well with ice in a shaker. Strain into a cocktail glass.
Austin Reserve gin and an Mythe absinthe rinse instead of anisette. Bright, lemony, and smooth but not thick. The overall impression was that of a boozy lemon meringue pie in a glass.
