1 oz. lemon juice
1 egg white
1 barspoon powdered sugar
1/4 oz. simple syrup
2 oz. gin
Shake first five ingredients well with ice in a shaker. Strain into a collins glass over ice. Fill with soda.
Austin Reserve gin. Now… I’ve had gin and lemon before, even with a bit of simple syrup, and it’s good. Why would the addition of an egg white make any difference in the taste at all? In the consistency, the texture… sure. But the taste? This version is very herbal. I even get a hint of rosemary (although Michael said he didn’t get that). Great sweet/tart balance with almost no bitterness and a nice bite.
