New Orleans Fizz

October 8, 2015 – The Republic Steakhouse

New Orleans Fizz

1 oz. lemon juice
1 egg white
1 barspoon powdered sugar
1/4 to 3/4 oz. simple syrup
Dash orange flower water
1/4 oz. cream
2 oz. gin

Shake first seven ingredients very well over ice in a shaker. Strain into a collins glass filled with ice. Fill with soda.

Jensen’s Old Tom gin. What a great drink! Ben shook the heck out of it, which created that fantastic meringue-like top that clings to the drink below, parceling out delicious portions through to the end. Schumman has a note on this saying it’s also called a Ramos Fizz, but there was some discussion behind the bar as to whether that sounded true or not. Either way, I really enjoyed this.
