Jean Gabin (Charles Schumann, 1986)

1 1/2 oz. dark rum
3/4 oz. Calvados
1 T. maple syrup
Hot milk
Nutmeg

Heat first three ingredients in a heat-resistant glass. Fill with hot milk and sprinkle with nutmeg.

Meyers dark rum. Boozy and not very sweet. The Calvados actually comes through with a slight hint of apple. The maple is there, barely, giving the drink a little rounded sweetness while the rum adds a touch of spice.

Dash of lime juice
Dash of grenadine
3/4 oz. Noilly Prat
3/4 oz. Calvados
3/4 oz. white rum

Stir well over ice in a mixing glass. Strain into a chilled cocktail glass.

 

Dolin dry vermouth, Flor de Caña white rum. Noilly Prat is an extra dry French vermouth that The Republic doesn’t stock, so we went with the Dolin. This cocktail is definitely Martini-ish with a lack of citrus tang. The grenadine offers a stoney sweetness and the Calvados is a bit sharp. Overall the effect is light, crisp, and herbal. Sometimes a combination of ingredients leaves me in a quandry. The first few sips come off as what I can only describe as “weird”; I kind of feel like want to not like this, but I do like it.

Apple Sunrise (Charles Schumann, 1980)

Dashes of lemon juice
1/4 oz. crème de cassis
1 1/4 oz. Calvados
2 3/4 oz. orange juice

Pour each ingredient one after the other into a collins glass. Stir gently.

Edmund Briottet crème de cassis, Daron Calvados Fine. Another surprising addition to the short list of tasty Calvados cocktails. I can actually taste some apple in this one, although I suppose it might be an illusion from the orange and cassis. Although slightly punch-like, this is not tropical or beachy and has a definite autumn vibe.

1 oz. Calvados

Stir with ice in an old-fashioned glass.

Wow! I am very impressed. This little cocktail has a wonderful sweet/bitter balance with a deep dried fruityness that is very much like a good port. I can definitely add this to the very short list of good Calvados drinks.

Lime
1 sugar cube
3/4 oz. Calvados
3/4 oz. white or dark rum

Press sugar cube on a lime wedge in a small highball glass. Pour in liquors and stir well. Add ice cubes and stir again.

Meyer’s dark rum. This cocktail was definitely the winner of the night. A bit on the boozy side (nothing wrong with that!) and a little sweet, with the lime as a bright top note. Surprisingly enough, the Calvados boosts the rum and sharpens some of the caramel flavors. Definitely a keeper! The construction of the drink is pretty much the same as a traditional Caipirinha.

3/4 oz. lemon juice
1 barspoon powdered sugar
1/4 to 3/4 oz. triple sec
3/4 oz. Calvados
3/4 oz. brandy

Shake well with ice in a shaker. Strain into a chilled cocktail glass.

Christian Brothers brandy, Cointreau instead of triple sec. This cocktail has a citrus and floral nose and tart bite as well as plenty of warmth from the two brandies. After a few successful Calvados drinks, this one reverts back to the “why is it even in there?” category.

1 barspoon powdered sugar
Dashes grenadine
1 1/2 oz. Calvados

Shake well over ice in a shaker. Strain into a chilled cocktail glass.

Another for the very slowly growing list of tasty Calvados cocktails! Balanced tart and sweet with a ghost of apple, or more appropriately, “not stone fruit,” which is usually completely missing from other Calvados drinks.
